Crazy. Busy, Hectic. The rush to get out the door in the morning. Get the kid up. Make sure he’s dressed properly. His hair is brushed and teeth brushed. Make sure he eats a healthy breakfast. I’ve been dairy-free for 3 years now. Smoothies have been a part of my daily routine for years now but when I went dairy-free I was missing the yogurt from my drinks. On a recent trip to Walmart I stocked up on the new Silk Dairy-Free Yogurts. The single serving sizes come in vanilla, blueberry, peach and mango and strawberry. They’re located in the yogurt section of the refrigerated isle.
My smoothies are simple – I just add liquid (water, orange juice or pomegranate juice), yogurt and frozen fruit. My favorite fruits are strawberries, blueberries, peaches, pineapple, and mango. I usually add 2-4 kinds of fruit to each smoothie. Blend. Pour into a cup and out the door I go.
I used to use plastic tumbler cups and they were impossible to clean. My smoothie cup often sits in my car for a few hours baking in the sun which makes cleanup a challenge. Canning jars are the perfect solution along with the lids that work perfectly with straws.
Sometimes I make extra and freeze them in Popsicle molds – great after school snack for my son. These silicon molds are also great for packing in a lunch box – the smoothie is softened perfectly by lunchtime.
